For me, the fall season welcomes in all things warm, grounding and a little sweet too. This Fall Fruit Crisp is so simple and also incredibly versatile. You can use a variety of apples, sub in some pears, use up any lingering stone fruit you may have. I have actually come to prefer my fruit crisps with different fruits or at least with a few different types of apples. This crisp uses oats, coconut sugar and coconut oil so not only is it loaded with fruit, but it is also vegan, gluten free and refined sugar free as well.

I love crisps, especially this one, but in my opinion, a good crisp is nothing without that final touch – when it all comes together with an ice-cold scoop of creamy deliciousness melting overtop the fresh from the oven goodness. One of my favorite brands, So Delicious, who is changing the world through their compassionate, sustainable, plant based products recently released a line of non-dairy frozen mousse and it happens to be the perfect complement here. Insanely creamy, light and fluffy is truly an understatement as each pint is 330 calories or less. The salted caramel swirl is my favorite and an absolute must atop this crisp!

Fall Fruit Crisp

Ingredients

For the Filling

  • apples, pears and/or peaches peeled cored and sliced
  • 1/2 cup  coconut sugar
  • 1/2  tsp cinnamon

For the Topping

Instructions

  1. Preheat oven to 350°. Set aside a 9x13 baking dish.
  2. In a large mixing bowl, toss sliced fruit with coconut sugar and cinnamon until thoroughly coated. Spread into baking dish.

  3. In a dry food processor or blender, process 1 cup of oats into a flour - or you may use another flour if you prefer. In large mixing bowl stir together the oat flour, remaining 1 cup of oats, cinnamon, coconut sugar and salt. Once combined, pour in coconut oil and mix.

  4. Crumble the topping over the apples and baked covered with tin foil for 15 minutes. Remove foil and bake for another 20-30 minutes until apples are tender and the top is crisp and golden.

  5. Carefully remove from oven and allow to cool for 5-10 minutes. Serve with a generous scoop of So Delicious Dairy Free Salted Caramel Swirl Frozen Mousse. Enjoy!
