This is one of my favorite dressings for burrito bowls, tacos, taco salads, regular salads – really anything you want to add some creamy, savory, spiciness to with no dairy, oil or cholesterol. There is no heat to this recipe but feel free to add some cayenne pepper or hot sauce to light it up a bit. I love adding a little Chipotle tabasco to it.

I usually keep raw cashews soaking in the fridge but if you don’t have soaked cashews and own a high speed blender like a vitamix, you can definitely make this on a whim – you may need to add a little extra water though. If you don’t own a high speed blender, I definitely recommend soaking or boiling your cashews beforehand.


Creamy Chili Lime Dressing


  • 1 cup raw cashews soaked
  • 2/3 - 1 cup of water
  • 1/4 cup fresh lime juice
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • cayenne pepper optional, to taste


  1. Put all ingredients in a high speed blender and blend on high for about a minute. Depending on how thoroughly your cashews are soaked you may need more or less water.

Recipe Notes

Soak cashews in water for 4 hours or overnight. Short on time? Pour boiling water over them and soak for 5 minutes.

will last in the fridge for 3-5 days
