Fueling the fall trend for all things Pumpkin Spice with this hearty way to energize your morning! While pumpkin spice may have some “betchy” connotations these days, pumpkin itself is a really powerful food that has many health and beauty benefits.

Pumpkins are rich in antioxidants and are anti-inflammatory which help keep joints, tissues and organs healthy. Because pumpkin contains L-tryptophan, a chemical compound that triggers feelings of well being, it can aid in stress relief and boost your mood!

Pumpkin is also rich in fiber, protein and plant based fatty acids which all help regulate cholesterol and keep the heart healthy. Loaded with Vitamin A for those beautiful peepers plus Vitamin C and Zinc to boot the immune system and encourage collagen production for glowing, youthful skin. The carotenoids which make pumpkin orange also prevent premature aging.
So, while I may not be on board with the high fat, calorie, caffeine and often dairy laden #PSL trend, the pumpkin thing I can totally get behind!

 

Pumpkin Spice Chia Pudding

Ingredients

  • ¼ cup chia seeds
  • ½ cup plant milk
  • ½ cup 100% pumpkin puree
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 tsp pumpkin spice*
  • pinch Himalayan pink salt

*Pumpkin Spice Mix

  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ½ tsp cloves

Instructions

  1. Combine all ingredients except the chia seeds. Stir well or blend until smooth and all ingredients are incorporated

  2. Mix in the chia seeds and stir well

  3. Place mixture in the refrigerator for at least 30 minutes or overnight to allow chia seeds to become gelatinous.

  4. Top with nuts, seeds, coconut whipped cream or whatever your heart desires!
