Sharing my tried and true recipe for vegan Pumpkin Pie – just in time for the holidays! The filling contains 7 simple ingredients and 3 easy steps. It’s totally foolproof and sure to be a crowd pleaser.
Aside from the simplicity of this recipe, it’s extra helpful, especially during these times, that all of the ingredients for this filling are shelf stable! So convenient for those of us trying to avoid the holiday crowds and trips to multiple stores.
I bought everything for this pumpkin pie filling recipe at my local ACME Markets – my one-stop-shop for holidays needs. After experimenting with several different sweeteners in this filling, I decided cane sugar was my favorite result. Using organic sugar, like O Organics Granulated Cane Sugar, is important because conventional cane sugar is not only widely criticized for its detrimental environmental impacts, but it also contains animal bone char which is not vegan.
To make the filling, you quite simply, measure all ingredients into a blender, blend until incorporated and then pour the mixture into the prepared pie crust to bake. It doesn’t get easier than that!


Another important note – Pumpkin Pie Spice! They are not created equal. For example, my recipe for Creamy Pumpkin Mac notes using a pumpkin pie spice without all-spice – which I prefer in that recipe but do not love in my Pumpkin Pie. In my opinion, all-spice is a non-negotiable, must-have ingredient in Pumpkin Pie spice. In fact, I’ve been so unenthusiastic about most store-bought pumpkin pie spices that in past years I would often make my own. Then I found O Organics Pumpkin Pie Spice. Pumpkin Pie
Ingredients
Pumpkin Pie Filling
- 1 1/2 15oz cans of pumpkin purée ~3 cups
- 3/4 cup canned coconut cream* chilled
- 3/4 cup O Organics Granulated Cane Sugar
- 3 tsp O Organics Pumpkin Pie Spice
- 1/2 tsp Signature SELECT Vanilla Extract
- 2 tbsp arrowroot starch
- pinch salt
Pie Crust of Choice
Instructions

Preheat oven to 350°. Add all pumpkin pie filling ingredients to a blender and blend for about 1-2 minutes until well incorporated and creamy. Using tamper to assist in blending if necessary.

Pour the blended filling into a pie pan prepared with pie crust of choice. Use a silicone spatula to remove remaining filling from blender. Smooth the top of the filling with spatula or the back of a spoon.

Bake Pumpkin Pie for 35-45 minutes or until the crust is golden and the top of the pie looks dry. Let cool and then refrigerate for at least 4 hours or overnight for best results. Enjoy cold or at room temperature. Option to top with dairy-free whipped cream or ice cream.

This pie was so easy to make and absolutely delicious – and makes great leftovers too 🙂 I didn’t have pumpkin pie spice, so I made my own (and made sure to include all spice, thanks for the taste tip Caroline!) and it was delicious. The extra coconut cream/milk went into ice cubes for future smoothies and the pumpkin puree is my pup’s favorite addition to homemade treats!
