Few things say comfort quite like a hot bowl of this No-Chicken Noodle Soup. It’s vegan, can easily be made gluten-free and it’s kiddo-approved!

This recipe for No-Chicken Noodle Soup packs all the taste nostalgia of the animal based version – but no chickens harmed here! It’s got tender vegetables, flavorful broth, slurpable noodles, and filling protein from the tofu. In my house, this soup is on repeat in the winter months and can almost always be found on the stovetop on snow days.

The real star ingredient in this recipe is the Better Than Bouillon Vegetarian No Chicken Base, which is vegan. It’s a must-have in my kitchen and is necessary for nailing the flavor of this classic soup. There are several other plant based no-chicken broths available. Of course, use what you have or is accessible to you, but the Better Than Bouillon version is by far my favorite. I also love that it comes in a glass jar.

I like to make my No-Chicken Noodle Soup with Wildwood Baked Savory Tofu in place of chicken. It’s tender, flavorful and so quick and easy to cube up and toss right into the soup. Feel free to substitute for your favorite plant based chicken alternative or omit all together. The soup is just as delicious either way.

No-Chicken Noodle Soup

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 small yellow onion chopped
  • 3 cloves garlic minced
  • 2-3 stalks celery chopped
  • 2 large carrots chopped
  • 1 7oz package Wildwood Baked Savory Tofu cubed
  • 1 tsp dried thyme more or less to taste
  • 8 cups prepared Better Than Bouillon no-chicken bouillon broth
  • 2 cups pasta of choice
  • salt & pepepr to taste

Instructions

  1. Heat 1 tbsp olive oil in a large pot over medium heat. Add vegetables and sauté for about 8-10 minutes until onions are soft and translucent and vegetables are starting to get tender.

  2. Stir in diced tofu and thyme. Add the prepared no-chicken bouillon broth and bring to a boil. Add pasta and cook according to package instructions.

  3. When pasta is cooked, remove from heat, season to taste and serve.
