This cool, creamy and easy dressing is seriously next level! I have been making it for years now and it’s a must have on just about any Mexican style dish in my home.
Just a handful of ingredients, thick and indulgent but contains zero oil, soy, gluten or dairy. Drizzle it on anything from tacos, burrito bowls, salads or perhaps just a plain old bowl of black beans. Yep, I’ve definitely done it.

Mexican Spiced Cauliflower Tacos

Cilantro Lime Crema
Ingredients
- 1 cup raw cashews soaked
- 1/2 cup water
- Juice of 1 lime , roughly 1/4 cup
- 1/4 cup cilantro
- 1/4 tsp onion powder
- 1/2 tsp salt
- 1 clove garlic optional
Instructions

Blend all ingredients in a high speed blender for about 1-2 minutes until creamy and smooth. Adjust lime and cilantro to taste.
Recipe Notes
Soak cashews in water for 4 hours or overnight. Short on time? Pour boiling water over them and soak for 5 minutes. You can also skip them step if you have a high powered blender like a Vitamix.
Dressing may thicken in the refrigerator.
Will keep in the refrigerator for about 3-5 days

I highly recommend cashews but you could try raw soaked and skinned almonds. You could also try silken tofu but you will likely want to use less liquid with this option.
