This is what happens when you wake up to chocolate cravings but aren’t ready to commit to a full blown chocolate bar, dessert or refined sugar for breakfast. Coconut brownie bites…not too shabby if you ask me!
These raw, vegan, gluten free and guilt-free treats are made with 3-4 simple ingredients that come together in minutes. Super simple and so delicious. I dare you to eat just one!
The recipe here approximate so feel free to have a little fun. I have made these with only 12 dates, used 2 tbsp of cacao powder and only a few tablespoons of coconut for rolling. The end result was super fudgy and crazy decadent!
Feel free to experiment, give them a bit of a nutritional boost with hemp seeds, ground flax seeds, add your favorite nuts or nut butter or whatever calls to you!

Raw Coconut Brownie Bites
Ingredients
- 20 pitted medjool dates , about 2 cups
- 2-3 tbsp cacao powder
- 1/4 cup unsweetened desiccated coconut , plus more for rolling
- 1/4 cup almond flour
Instructions

In food processor, pulse together all ingredients for a minute so until a crumbly dough forms

Fill a shallow bowl with some extra desiccated coconut. Pinch off some of the dough and roll into 1-inch balls, then roll in coconut to coat
Recipe Notes
If you have a nut allergy or prefer no nuts, simply sub out almond flour for more desiccated coconut or coconut flour

This was my first time making one of your recipes, and it turned out so well! I used pulp from making almond/pepita/flax milk this morning and added an extra tbsp cacao to make up for the extra moisture. I also added cacao nibs, cinnamon, and vanilla so they would taste more like my normal brownies. Have you tried freezing these/if so do they freeze well?
