If I had to describe summer in one food it would be WATERMELON! This sweet, hydrating summer favorite is not only delicious it’s also soaked with nutrients.
Watermelon is a speedy source of energy and incredibly nutrient dense despite being calorically dilute. It’s rich in the antioxidant lycopene, B-vitamins and easily digested to quickly fuel our cells and replenish electrolytes. Watermelon is also super heart healthy too – the citrulline, arginine, potassium and magnesium help maintain arteries, blood flow, overall cardiovascular functioning and effectively lowers blood pressure. Meanwhile, vitamin C boosts immunity and flavonoids combat inflammation and associated diseases. The high water content also supports hydration and maintains proper kidney function.
This easy Watermelon Gazpacho takes only a couple minutes to prepare and can easily be doubled or tripled for parties or gatherings – it is always on my table during summer BBQ’s! Just be sure to let it chill in the fridge before serving. Garnish with avocado, cilantro, hot sauce or simply serve straight up!

Watermelon Gazpacho
Ingredients
- 5 cups of watermelon
- 1/4-1/3 cup red onion , roughly diced
- 1/4 cup cilantro packed
- 6 pickled jalapeño rounds (more or less to taste)
- Juice of 1 lime
- Salt
Instructions

In a food processed or high speed blender, pulse together all ingredients a few times until well combined but a bit of texture still remains. Chill before serving.

Hi Ivonne! Thank you so much!! Almost any brand of Chili Powder should work. I have used McCormick, Archer Farms and Aldi Brand. I tend to like ones that are a blend of chili pepper, garlic, oregano, cumin and salt. Hope that helps!
